NGHS Elderberry Syrup Recipe

1 cup by volume (3.55 oz) dried elderberries 
4 cups cold water 
2 tsp powdered ginger root 
1 tsp whole clove 
1 cinnamon stick 
1-2 cup raw honey

Combine all of your ingredients, EXCEPT honey in a pot and bring to a boil. Once boiling reduce your heat and simmer for 30 minutes or until your liquid has decreased by half. Remove your liquid, or decoction, from the heat and steep for 30 minutes. After steeping, strain out your berries and herbs using a mesh strainer or cheesecloth over a funnel and squeeze out all of the liquid. Once the liquid has cooled to just above room temperature, stir in enough honey to have an equal proportion of decoction to honey, it will be somewhere between 1 and 2 cups depending on your sweetness preference. Store your syrup in a clean quart-sized jar in the refrigerator.

DOSING:
1/2-1 teaspoon for kids daily 
1/2-1 Tablespoon for adults daily 
When flu or sickness hits, take normal dosing every 2-3 hours until symptoms disappear.
